As Hitopan Kobo moves to Higashi Matsudo, the new store will have three times the capacity of the current store, and it is urgent to increase production volume. This time, as part of the preparations for the move, we visited Elfa, a used bread equipment store. In order to increase production efficiency and create a healthy working environment, we checked out the "Mulder," which automates the degassing of bread dough, and the "Reverse Sheeter," which evenly stretches croissant and pie dough. Furthermore, in order to aim for the best baked result depending on the type of bread, we are considering introducing a "deck oven" in addition to the current convection oven. We are open every Saturday and Sunday from 8am.
We are particular about our ingredients, and use Kumamoto's "Minami no Megumi" flour, which has a strong sweetness and aroma.
The sugar is mineral-rich raw sugar from Kagoshima Prefecture.
We use Okinawa's "Shima Mars" salt.
