[Ingredients] (Serves 1-2)
1 chicken thigh (300g)
100cc sake
2 tablespoons light soy sauce
2 tablespoons light soy sauce

Recipe
1. Open the chicken and defrost it in boiling water for a few seconds.

2. Add 3 cups of water, 100cc of sake, 5cm square of kombu, and 2 tablespoons of light soy sauce to a pot, and add the chicken.

3. Just before boiling, reduce heat to low and simmer for 20 minutes.

4、Remove the kombu and chicken, and chop the chicken and spring onions.

5. After boiling the somen hard, drain the water, rinse under running water and drain. Add them to the soup and simmer until desired consistency.

6. Sprinkle with spring onions, sesame oil, black pepper, and shichimi (seven spices) to finish.
