The BEST Sticky Toffee Pudding | recreating popular British dessert in the style of Hawksmoor

Recreating one of my favourite desserts in London: Hawksmoor's take on the Sticky Toffee Pudding, arguably one of THE BEST item on their menu! Obviously the restaurant did not invent this dish however their take is by far my favourite - and it's actually super easy to recreate at home! I ordered their sticky toffee pudding to be delivered at home to compare and this version is pretty spot on! This recipe is adapted from Hawksmoor's recipe:

PUDDING:
125g chopped dates (about 15 dates)
3g bicarbonate of soda (1/2 tsp)
200ml boiling water (1 cup)
60g unsalted butter (1/4 cup)
60g light muscavado sugar (1/3 cup)
60g dark muscavado sugar (1/3 cup)
1 egg
220g plain flour (all purpose) (1 +3/4 cup)
3g baking powder (1/2 tsp)
1 pinch of salt

TOFFEE SAUCE
90g dark muscavado sugar (1/2 cup)
30g light muscovado sugar (2 tbsp)
125g unsalted butter (1/2 cup)
125ml double cream (1/2 cup)

clotted cream, vanilla ice cream to serve
