Some days ago it was Mid-Autumn Festival, let me suddenly really miss moon cakes. There is a classic mooncake - the egg yolk pastry. One of its ingredients is a salted egg. In Germany it's not easy to find salted egg, that’s the reason I made by self. Homemade salted egg is so easy. You can take chicken eggs or duck eggs. Salted eggs can be used for many dishes. People make zongzi with it on the Dragon Boat Festival, bake egg yolk pastry with it on Mid-Autumn Festival, even some homemade dishes with salted eggs taste also so delicious.

📝English Recipe
[Ingredients]
• 16 Eggs (chicken eggs or duck eggs)
• 1200ml Water
• 300g Salt (ratio of water:salt = 4:1)
• 60ml Rice Wine contains 30~40% alc. (ratio of water:wine = 20:1)
1. Put the eggs into a glass jar and fill it with water. After that, take the eggs out again and weight the water to get to know the amount of water you need. Now prepare the same amount of clean water as well as salt and rice wine in proportion like written above.
2. Pour the water into a pot and boil it.
3. After water is boiling, add salt and stir until it is dissolved.
4. Set the salty water aside for cooling down.
5. Boil another pot of water (additional to this what's written in ingredients) and use it for desinfect the glass jar. Set the glass jar aside and let it dry.
6. Wash every egg and be sure the surface doesn't has any damage. Set the eggs aside and let them dry.
7. Let the salty water cool down till room temperature and prepare the glass jar.
8. Pour the rice wine into the salty water and stir well. In Germany I use Vodka instead of rice wine.
9. Put all eggs into the glass jar. Handle with care, don't let them break.
10. Pour the water, what includes salt and rice wine, into the glas jar. All eggs have to be covered by the water.
11. Close the glass jar with the lid and write the date on it. Place it for one month to a cool and dark storage.
12. After one month, take an egg out of the glass jar and break it to check the egg yolk. If it is solid, the salted egg is ready. Raw salted eggs can be used to make egg yolk pastry.
13. Put the raw salted egg into a pot and steam or boil for 15min. After that it's ready to eat.
14. Boiled salted eggs can be used with porridge, fried bitter melon or other homemade dishes. Everything of it is yummy.
