Method

Heat 3 tablespoons of oil in a wide pan.

Add 1 teaspoon each of mustard seeds and cumin seeds.

Once they splutter, add 2 finely chopped onions and sauté until golden brown.

Add 2 slit green chilies and sauté briefly.

Then add 2 chopped potatoes and cook on medium flame for 5 minutes, stirring occasionally.

Add 2 teaspoons of freshly crushed ginger-garlic paste and sauté until the raw smell disappears.

Now add 1½ teaspoons salt, ¼ teaspoon turmeric, 2 teaspoons red chili powder, 1 teaspoon cumin powder, 2 teaspoons coriander powder, and ¼ teaspoon hing.

Mix well to coat the potatoes with the spices.

Next, add 3 chopped tomatoes and cook until they soften.

Meanwhile, chop 250g of brinjal into small cubes and soak them in salted water.

Once the tomatoes are cooked, add the brinjal pieces and mix well. Cook for 5 minutes.

Sprinkle ½ teaspoon garam masala, pour in ½ cup of water, mix thoroughly, cover, and simmer for 10 minutes on medium flame.

Finish with chopped coriander leaves and give it a final stir. Serve hot!
