However, over the past five to ten years, Bún Bò Huế has really stepped its game up and is in contention, and many would even argue that Bún Bò Huế is their number one favorite Vietnamese dish!
Bun Bo Hue is a traditional Vietnamese soup known for its rich, spicy, and savory flavors. Originating from Hue in central Vietnam, this dish features a robust beef broth infused with lemongrass, shrimp paste, and chili oil, giving it a distinctive and aromatic taste. The soup is typically made with slices of tender beef shank and pork hocks!

Its cleaner to soak the shrimp paste with boiling water, let sit and then pour the water into the broth. Discarding the residue at the bottom. Also, using a thai/lao shrimp paste brand gives a better flavor. Im chinese so I've tried it.
Charring the onion really does gice that smokey aroma too, every little extra work helps.
Lastly- dont put the lemongrass that fast, it will diminish the flavor. It's better to cook the meat for 1hr first abd then add the aromatics to conserve its full potential.

Hello! You should soak your noodles in water at least 20 minutes before boiling them to cut off the cooking time! Looks delicious!

Your soup looks really good. The noodles, they soak it first. That is why it is so quick, and the pork blood. They cook the whole thing first, before they cut it into cubes. Oh! The shrimp paste, they mixed it first and only use the clear water. So that, the broth isn't look cloudy.
