Lemon Cupcake + Lemon Buttercream Frosting = Most perfect Cupcake 🍋

When we talk about cupcakes, what’s always coming in our brain is the little and cutie cakes, the super high calories but beautiful, attractive and irresistible buttercream frosting on top. Those classic cupcakes taste moist and soft, and the sweet buttercream frosting has a lemon flavor. For me, it’s the most perfect cupcake!

📝English Recipe
[Lemon Cupcake]
• 150g Cake Flour
• 150g White Sugar
• 150g Softened Unsalted Butter
• 2 Eggs (size M)
• 5g Lemon Juice
• 35ml Milk
• 5g Baking Powder
• A little bit of Lemon Zest

1. Add white sugar and softened butter in a mixing bowl, use mixer with low speed until mixed well.
2. Add lemon juice as well as milk and mix well.
3. Add eggs and mix well.
4. Add a little bit of grated lemon zest, either lemon or lime.
5. Sift the flour and baking powder, mix well.
6. Place 12 cupcake liner in a baking pan, use 2 spoons to dig the cake batter and fill into it. Fill every cake liner with about 45-50g. If you fill too much cake batter, cupcakes will be run over the cake liners during baking.
7. Preheat the oven to 170°C. Place cupcakes in oven and bake for 20-25 minutes. Take them out when the top color is light brown.
8. Place cupcakes to a cooling grid to cool down.

[Lemon Buttercream Frosting]
• 150g Softened Unsalted Butter
• 340g Powdered Sugar
• 20g Lemon Juice

1. Add butter in a mixing bowl and use mixer with medium speed for about 4-5 minutes until the butter is light yellow color and creamy.
2. Sift the powdered sugar and add it in the mixing bowl in 2-3 steps.
3. Use a spatula to mix roughly by hand to prevent powdered sugar from flying out when the hand mixer turned on. Use mixer with low speed until mixed well. After all the powdered sugar is mixed into, add the lemon juice. The buttercream frosting is ready when mixed well.
4. Put the buttercream frosting into the piping bag.

[Cupcake] + [Buttercream Frosting]
1. Choose your favorite piping nozzle and decorating sugar.
2. After cupcakes are cooled down, pipe buttercream on top of each cupcake and sprinkle some decorating sugar or lemon zest. Enjoy!
